The traditional method (méthode traditionelle or méthode champenoise), the Martinotti (or Charmat) method, and the ancestral method (méthode ancestrale) are the three methods used to make superior sparkling wine. Champagne, cava, and crémants are made following the classic process, which involves reinitiating still wine with a secondary fermentation (performed in the bottle) using a yeast and sugar mixture. These wines are aged on the lees in bottles before being disgorged, dosed (if desired), and re-corked before being sold.
