Besserat de Bellefon Blanc de Blancs Grand Cru Brut NV – Champagne, France

The Besserat de Bellefon Blanc de Blancs Grand Cru Brut is a refined 100% Chardonnay Champagne sourced exclusively from six Grand Cru villages in the Côte des Blancs. Mineral, citrus-driven and beautifully precise, it combines the purity of Grand Cru Chardonnay with the unusually fine, creamy mousse that defines the Besserat de Bellefon house style.

The house calls this its “Haute Couture” signature, and the description is fitting. This is a Champagne built around finesse rather than weight—bright, chalky and vibrant, with an elegant texture that makes it equally compelling as an aperitif or alongside seafood and refined cuisine.

The current Blanc de Blancs has also earned 1 Star (“a very successful wine”) in the 2026 Guide Hachette des Vins, which praised its fine effervescence, freshness and combination of white fruit and pastry character.

100% Chardonnay from Six Grand Cru Villages

What makes this Blanc de Blancs particularly compelling is the quality of its vineyard sources. The Chardonnay comes exclusively from six celebrated Grand Cru villages:

Avize • Chouilly • Cramant • Le Mesnil-sur-Oger • Oger • Oiry

These Côte des Blancs terroirs are renowned for their chalk-rich soils and ability to produce Chardonnay with remarkable freshness, minerality, tension and longevity. The six-village blend allows Besserat de Bellefon to combine several expressions of Grand Cru Chardonnay into a Champagne of greater complexity and balance.

Independent references confirm the six-Grand-Cru composition and the wine's 100% Chardonnay identity.

Tasting Notes

Brilliant pale yellow in the glass, the wine displays an exceptionally fine stream of bubbles and a delicate, persistent mousse.

The nose is intense, mineral and saline, opening with fresh lemon, citrus zest and chalk before revealing elegant floral notes of honeysuckle and acacia. With time in the glass, subtle white fruit and pastry nuances emerge.

On the palate, the Blanc de Blancs is taut and beautifully defined. Lemon and citrus provide the energetic core, complemented by chalky minerality and a subtle saline quality. The texture is where the Besserat de Bellefon style becomes particularly apparent: the mousse is creamy and silky rather than aggressive, giving the wine breadth without sacrificing precision.

The finish is long, clean and vibrant, with citrus, chalk and mineral notes lingering beautifully.

Guide Hachette's 2026 review similarly found white peach and pear followed by pastry notes, describing the palate as both silky and fresh.

The Besserat de Bellefon Signature

Founded in Aÿ in 1843 by Edmond Besserat and now based in Épernay, Besserat de Bellefon has developed a distinctive place in Champagne through its close relationship with gastronomy and fine dining.

The defining moment in the house's modern history came in 1930, when Victor Besserat was challenged to create a Champagne sufficiently delicate and creamy to accompany an entire meal.

His solution became a signature of the house: using less liqueur de tirage during the secondary fermentation, resulting in a lighter, more delicate effervescence and particularly creamy mousse. The house continues this distinctive method today.

The Blanc de Blancs itself was introduced in 1999 as an expression of Chardonnay focused on purity and finesse.

Winemaking & Aging

Another important distinction is the decision to avoid malolactic fermentation. By retaining the wine's natural acidity rather than softening it through malolactic conversion, Besserat de Bellefon preserves the citrus freshness, tension and mineral character of the Chardonnay.

The wine spends approximately three years aging on its lees, developing additional texture and complexity while retaining its freshness. The house's technical information specifies a further minimum of six months following disgorgement.

Dosage: 7 g/L
Lees Aging: 3 years
Post-Disgorgement Aging: Minimum 6 months
Malolactic Fermentation: None

The combination of extended lees aging, restrained dosage and Grand Cru Chardonnay creates a Champagne that balances creamy texture with impressive mineral precision.

Food Pairing

This is very much a gastronomic Blanc de Blancs. Its citrus acidity and chalky minerality make it particularly well suited to seafood and delicate dishes.

Excellent pairings include oysters, lobster, langoustines, scallops, caviar, grilled or poached white fish, sushi and sashimi, roast chicken and creamy seafood dishes.

It would also be excellent with fresh goat cheese or a young Comté.

Serve chilled at 46–50°F (8–10°C).

Why You'll Love It

For Chardonnay and Champagne lovers, the appeal is straightforward: 100% Chardonnay sourced exclusively from six Grand Cru villages of the Côte des Blancs.

But what distinguishes Besserat de Bellefon is its texture. The house's special approach to secondary fermentation creates an exceptionally fine and creamy mousse, while blocking malolactic fermentation preserves freshness and tension.

The result is a Champagne that brings together two seemingly opposite qualities—creamy and delicate in texture, yet taut, chalky and mineral in character.

For customers looking beyond the most familiar Champagne labels, this is an excellent opportunity to experience a distinctive Grand Cru Blanc de Blancs from a historic house with more than 180 years of history.
